Example 1:  Amount of beef per side:

900 lb Total animal live weight

½ carcass weight = 209.25

 

Round Steaks = 39 lbs

Round Tip Steaks = 12 lbs

Flank steak =  3 lbs

Sirloin Steaks =  36 lbs

T-Bone Steaks =  28 lbs

Top Loin Steaks = 6.5 lbs

Ribeyes =  12 lbs

 

Rump Roasts = 5 lbs

Rib Roasts =  21 lbs

Blade Roasts = 48 lbs

Arm Roasts = 36 lbs

 

Brisket = 10 lbs

 

Stew Beef =  19 lbs

Ground Beef =  70 lbs

 

Example 2: Amount of beef per quarter

900 lb Total animal live weight

¼ carcass weight = 104.6 lbs

 

Round Steaks = 19 lbs.

Round Tip Steaks =  6 lbs

Flank steak =  1.5 lbs

Sirloin Steaks =  18 lbs

T-Bone Steaks =  14 lbs

Top Loin Steaks = 3.25 lbs.

Ribeyes = 6 lbs

 

Rump Roasts = 2.5 lbs

Rib Roasts =  10.5 lbs

Blade Roasts = 24 lbs

Arm Roasts =  18 lbs

 

Brisket = 5 lbs.

Stew Beef =  9.5 lbs
